While not having tried the following recipe, we've been told it tastes like chicken; that is, if you like the dark meat.
Serves 6
1 young coon - skinned, dressed and cut into pieces like a chicken
1 bunch celery cut into chunks
2 onions cut into chunks
salt & pepper
3 boxes shells & cheese dinner
Salt & pepper coon pieces and put them in a crock pot or stock pot with the onions and celery and enough water to cover them well and stew over low heat until meat is "falling off the bone" tender. Remove meat and pull meat from bones in small pieces. In a large pot, prepare shells & cheese dinner according to the directions. Before adding the cheese packets, add the coon meat and stir all ingredients together well.
Serve with fried cornbread and turnip greens.

3:15 a.m. Update (Creatures Were Stirring) -- Jimmy jumped off the foot of the bed started barking like a crazy-dog at something on the deck outside the bedroom. Mr. Raccoon was back - just hanging out in the corner... Hopefully he doesn't have family that's looking for a new place to call home.
