COVID19: An Apple Pie Photo Essay


Apples from Griffin's Produce in Smithville.
Jack and I bought these on election day.
Arkansas Black, Mutsu (!!! my favorite), Rome

This Rome has beautiful snow-white flesh,
and there are lovely blushes of red inside.
These have tart flavor and give the pie 
some fun, red color as it bakes.

The Mutsus are HUGE. 
This may end up being a big pie.

Swoosh!
Three tablespoons brown sugar.
Two teaspoons cinnamon.
I hope I have enough pastry.

A pass with the magic rolling pin.
Two or three passes.
Whoof. That's a lot of apples.

PattyCake, PattyCake... Wait.
This isn't a cake.
This is a pie.
A really big pie.

A big, delicious, apple pie.
Yum.

COVID19: More Fanciness

I made another one of those not fancy pies the other night, but I got a little fancy with it. As I prepped  the apples and put handfuls of slices in the bowl, they arranged themselves kind of like this, and I was inspired to try something a different. Maybe there's a technical term for this arrangment. I don't know. I'm calling it a basketweave and delicious! 

The apples are Granny Smiths we got in a 3 pound bag from WalMart for less than four dollars. They're small, firm, and, like the pie - not fancy at all - but they know how to put on a good show when you ask them nicely and give them some fresh, loud cinnamon to call their own.
